This Non-Alcoholic Aperol Spritz swaps out the Italian liqueur for a hibiscus tea infused with orange and grapefruit peels and spices to approximate Aperol’s citrusy bitterness. And the Prosecco? Well, we took those pear and green apple notes and used real fruit juice combined with soda water to make our own non-alcoholic version of Prosecco, too!

Ingredients
Homemade Non-Alcoholic Aperol
- 4 cups water
- 1/2 cup dried hibiscus flowers
- 1 orange peel
- 1 pink grapefruit peel
- 2 star anise
- 6 whole cloves
- 1 oz simple syrup
- 16 dashes rhubarb bitters
- 16 dashes Angostura bitters
Prosecco Juice
- 1 medium green apple, juiced
- 2 bartlett pear, juiced
- 1 lemon, juiced
Non-Alcoholic Aperol Spritz Build
- 3 oz homemade N/A Aperol
- 3 oz Prosecco Juice
- 1 orange, juiced
- 5 oz Soda water, for topping
Instructions
Homemade Non-Alcoholic Aperol
- In a large bowl, add all ingredients except water (set aside orange fruit for use in Aperol Spritz Build). Bring water to boil. Pour into bowl. Let steep 10 minutes. Strain out solids. Chill.
Prosecco Juice
- In a container, add all ingredients and mix until well-combined.
Non-Alcoholic Aperol Spritz Build
- In a large stemless wine glass filled with ice, add all ingredients except soda water. Top with soda water. Enjoy.
