Pistachio Martini Recipe

This Pistachio Martini wants to have its cake and pretend it’s not eating it, too. It’s a dessert cocktail that’s not too sweet, or it’s a regular cocktail that’s on the sweet end. All we’re saying is you can drink it whenever you want. Pistachios are great for breakfast.

Ingredients

Homemade Pistachio Milk

  • 1 cup roasted pistachios, shelled
  • 3 cups water

 

Pistachio Martini

  • 2 oz rum
  • 1/2 oz amaretto
  • 1/4 oz genepy
  • 1/4 oz orange liqueur
  • 1.5 oz homemade pistachio milk
  • 1/8 navel orange, juiced
  • 1/4 lemon, juiced
  • 3/4 oz simple syrup
  • 1 Tbsp Pisti pistachio spread
  • Honey, for rim
  • Crumbled pistachio, for rim

Instructions

Homemade Pistachio Milk

  1. In a small container with lid, soak pistachios in water for at least 6 hours, or overnight.
  2. Add just pistachios and a little bit of the soaking water to a blender. Blend until pistachios are paste-like, but not butter. Add rest of water and blend until well-integrated.
  3. Using a cheesecloth, strain pistachio fragments from milk. Store in fridge for 3-4 days.

 

Pistachio Martini

  1. Combine all ingredients in a shaker. Using a bar spoon, stir aggressively until pistachio spread is well-intregrated. Add ice and shake until well-chilled. Pour into martini glass with pistachio crumble rim. Enjoy!
