Apple Streusel Cheesecake Muffins Recipe

These Apple Streusel Cheesecake Muffins are serving up yet another round of German-ishness for Oktoberfest. The word “apple” comes from the German “apfel”, and “streusel” is still walking around with its lederhosen on. Then Benjamin Franklin came to us in a dream and said to make this into a muffin and then toss in some cream cheese while we’re at it. Speaking of Pennsylvania, the Amish community there is known for its incredible baked goods. Those folks are known as the Pennsylvania Dutch, but they’re not just Dutch. Dutch here is a derivative of “deutsch” or “German”. But the Amish aren’t just German. And these muffins aren’t just muffins. They’ve been traveling hundreds of years all the way to your face.

Ingredients

Caramelized Apples

  • 2 honey crisp apples, peeled & cubed
  • 1/4 cup granulated sugar
  • 1 Tbsp cinnamon
  • 2 Tbsp butter

 

Cream Cheese Filling

  • 8 oz cream cheese, room temperature
  • 1 lemon, juiced
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 Tbsp milk

 

Streusel Topping

  • 1.25 cup flour
  • 1/2 cup dark brown sugar
  • 1/3 cup sugar
  • 1/4 tsp salt
  • 6 Tbsp butter

  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar
  • 2 cups AP flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1 Tbsp cinnamon
  • 1/2 cup canola oil
  • 3/4 cup cinnamon applesauce
  • 1/4 cup sour cream
  • 1/3 cup whole milk
  • 3 eggs
  • 1 Tbsp vanilla extract
  • Cream Cheese Filling
  • Caramelized Apples
  • Streusel Topping

COOKING INSTRUCTIONS:
Apple Streusel Cheesecake Muffins

Caramelized Apples

  1. Peel and cube apples into 1/4” cubes. Add sugar and cinnamon to apples and stir to coat.
  2. Add butter to a sauté pan and melt over medium heat. Add your apples to pan and allow to cook until your mixture thickens, resembling caramel, and your apples become slightly soften. Remove apples from heat and set aside.

 

Cream Cheese Filling

  1. In a medium bowl, combine all ingredients and mix with hand mixer until smooth. Set aside.

 

Streusel Topping

  1. In a large bowl, mix together flour, brown sugar, sugar, salt and melted better. Stir until mixture forms crumbles. Set aside.

 

Apple Streusel Cheesecake Muffins

  1. Preheat oven to 425ºF
  2. In a small bowl mix together oil, applesauce, sour cream, eggs, milk, and vanilla.
  3. In a separate bowl mix together flour, sugar, dark brown sugar, baking soda, baking powder, salt, and cinnamon.
  4. Add wet mixture to dry mixture and whisk until integrated and smooth.
  5. In a muffin tin, line each with a silicone liner. Fill each liner half full with batter. Add 1/2 Tbsp of Cream Cheese Filling to each cup. Top with a Tbsp of Caramelized Apples. Fill muffin cups to the top with additional batter.
  6. Top each muffin with enough Streusel to completely cover the top.
  7. Place muffin pan in the oven and allow to bake at 425ºF for 5 minutes. Reduce heat to 350ºF and bake for an additional 15-18 minutes. Remove from oven and test muffins for doneness with a toothpick. Let cool for at least 10 minutes. Enjoy!
