These Bacon-Wrapped Pineapple Jalapeño Poppers bring the heat, salt, and sweet, all rounded out by the rich pineapple and Tajin cream cheese filling. If you want to keep these crowd-friendly, just deseed them. However you serve them, we can promise you one thing—there won’t be any leftovers.

Ingredients
- 12 large jalapeños, halved & deseeded
- 8 oz cream cheese, softened
- 1 Tbsp Tajin
- 3 cups freshly diced pineapple (don’t use canned pineapple)
- 12 pieces of thin-sliced bacon
COOKING INSTRUCTIONS:
Bacon-Wrapped Pineapple Jalapeño Poppers
- Pre-heat oven to 400°.
- In a medium-sized bowl, add cream cheese and Tajin. Using an electric hand mixer, blend until cream is smooth and Tajin is fully integrated. Be sure to drain off any excess juice from diced pineapple before folding into cream cheese mixture (if needed, gently blot cutting board with paper towel to soak up excess juice). Fold in pineapple until evenly distributed.
- Using a teaspoon, spoon cream cheese mixture into each jalapeño half.
- Cut bacon strips in half so that you have 24 slices. Wrap bacon around the stuffed and place on a parchment-lined baking sheet.
- Bake for 20-25 minutes, or until the bacon is cooked and crispy. Serve immediately.
