Ingredients
- 12 large jalapeños, halved + deseeded
- 3 cups fresh pineapple, diced
- 8 oz cream cheese, softened
- 1 Tbsp Tajin
- 12 pieces of thin-sliced bacon, cooked
COOKING INSTRUCTIONS:
Bacon-Wrapped Pineapple Jalapeño Poppers
- Pre-heat oven to 400°.
- In a bowl, add diced pineapple, Tajin, and cream cheese. Using an electric hand mixer, blend until cream smooth.
- Using a teaspoon, spoon cream cheese mixture into each jalapeño half.
- Cut bacon strips in half so that you have 24 slices. Wrap bacon around the stuffed and place on a parchment-lined baking sheet.
- Bake for 20-25 minutes, or until the bacon is cooked and crispy. Serve immediately.
