Ingredients

  • 12 large jalapeños, halved + deseeded
  • 3 cups fresh pineapple, diced
  • 8 oz cream cheese, softened
  • 1 Tbsp Tajin
  • 12 pieces of thin-sliced bacon, cooked

COOKING INSTRUCTIONS:
Bacon-Wrapped Pineapple Jalapeño Poppers

  1. Pre-heat oven to 400°.
  2. In a bowl, add diced pineapple, Tajin, and cream cheese. Using an electric hand mixer, blend until cream smooth.
  3. Using a teaspoon, spoon cream cheese mixture into each jalapeño half.
  4. Cut bacon strips in half so that you have 24 slices. Wrap bacon around the stuffed and place on a parchment-lined baking sheet.
  5. Bake for 20-25 minutes, or until the bacon is cooked and crispy. Serve immediately.
