COOKING INSTRUCTIONS:
Beef Stroganoff Meatball Sandwich

  1. Preheat oven to 375ºF Add oil to a large pan over medium-high heat. Sauté mushrooms until tender. Salt and pepper to taste. Remove from pan and set aside.
  2. In same pan, whisk together butter and flour until combined. Cook for about 1 minute. Whisk in gravy and beef broth. Bring to simmer then whisk in sour cream and mustard. Salt and pepper to taste.
  3. Stir in meatballs and mushrooms. Maintain a gentle simmer to the sauce and stir occasionally until meatballs are heated through and sauce reaches desired thickness.
  4. Lower heat to low until ready to serve. While meatballs are cooking, slice open hoagie rolls from their tops and line each with shredded cheese. Toast them on foil-lined baking sheet for ~5 mins, or until cheese is melted and bun is lightly toasted.
  5. To build each sandwich: place desired number of meatballs in each toasted hoagie roll, then ladle extra sauce over them. Garnish with fresh parsley. Serve immediately and enjoy!
