This Beet and Citrus Salad with Spiced Yogurt is the perfect dish for people that whine about wanting summer in the winter time, then whine about wanting winter in the summer time. It’s light enough for when you’re crying about the heat, and festive enough for when you’re crying about the cold at Christmas. But that’s only if you live in the Northern Hemisphere. Because it’s winter right now in Australia. Which means they’re sobbing for summer. Or maybe not. Maybe they’re just out punching kangaroos and living life without complaint. We should all try that. Especially punching kangaroos.

Ingredients
Spiced Yogurt
- 2 cups nonfat plain Greek yogurt
- 4 oz garlic & herbs goat cheese
- 1/4 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp coriander
- 1/8 tsp nutmeg
- 2 Tbsp honey
- 1 Tbsp fresh thyme leaves
- Salt, to taste
- Pepper, to taste
Beet and Citrus Salad with Spiced Yogurt
- 6 small golden beets, peeled
- 9 small red beets, peeled
- 1/2 head garlic, peeled & crushed
- Olive oil, to taste
- Salt, to taste
- Pepper, to taste
- 4 blood oranges, peeled and sliced into wheels
- 2 navel oranges, peeled and sliced into wheels
- 1 grapefruit, peeled and sliced into wheels
- Spiced Yogurt
- Fresh thyme sprigs, for garnish
COOKING INSTRUCTIONS:

Spiced Yogurt
- Combine all ingredients in a medium bowl. Using an electric hand mixer with whisk attachment, whip until well-integrated and creamy. Cover and refrigerate until ready for use.
Beet and Citrus Salad with Spiced Yogurt
- Preheat oven to 400ºF.
- If beets are very large, cut into pieces about the size of a small beet. Create a large foil packet, then place beets and garlic in it. Drizzle with olive oil, then salt and pepper them. Roast for 45 minutes or until tender. Remove from oven and let cool. Cut into large bite sizes. Set aside.
- On a large serving plate or shallow bowl, spread out Spiced Yogurt evenly. Arrange citrus then beets on top of yogurt. Garnish with fresh thyme sprigs. Enjoy!
