Broccoli Cheddar Bites Recipe

These Broccoli Cheddar Bites are like broccoli cheese soup intensified into little appetizer bites. Not only are they delicious, but they’re also ideal for gatherings and potlucks where soup is too difficult to keep warm!

Ingredients
- 8 oz Velveeta cheese, grated
- 9 cups uncooked broccoli florets, chopped into 1/2″ pieces
- 2 Tbsp butter
- 4 cloves garlic, minced
- 1 yellow onion, diced
- 4 carrots, shredded
- 1 Tbsp Chicken Better Than Bouillon
- 2 Tbsp Dijon mustard
- 2 cups panko bread crumbs
- 3 cups cheddar, shredded
- 4 eggs, scrambled
- 1/2 tsp salt
- 1 tsp black pepper
- 1/4 tsp cayenne pepper
COOKING INSTRUCTIONS:
Broccoli Cheddar Bites
- Place Velveeta in freezer for approximately 15 minutes to firm up. Remove from freezer and grate on box grater.
- Steam broccoli until soft. Set aside.
- In a pot, add butter, diced onions and shredded carrots. Sauté until soft. Add in minced garlic and cook until fragrant. Add Better Than Bouillon to veggie mixture and stir until coated and combined.
- Preheat oven to 400º.
- In a mixing bowl add broccoli, sautéed vegetables, cheeses, eggs, bread crumbs, and mustard. Using your hands, mix and mash all ingredients together until they can be formed into golf-sized balls. Place them on parchment-lined baking sheet and spray with cooking spray.
- Bake for 18-20 minutes, or until crisp on the outside and golden brown.
