Caprese Portobello Sandwich Recipe

This Caprese Portobello Sandwich goes out to everyone who has ever argued on either side of the vegetarian debate. Go pick up a new hobby or something. Like playing ukulele. Or boxing. Or playing ukulele with boxing gloves. If you can do that, then maybe we’ll consider arguing about vegetables.

Ingredients
- 8 portobello caps, cleaned
- 1/2 cup canola oil
- 1/2 cup balsamic vinegar
- 1 Tbsp garlic powder
- 1 Tbsp dried basil
- 1 Tbsp dried oregano
- Salt, to taste
- Pepper, to taste
- 1 clove garlic, minced
- 1/4 cup + 2 Tbsp mayonnaise
- 1/2 lemon, juiced
- 1 lb fresh mozzarella, pre-sliced
- 4 ciabatta rolls
- 2 large tomatoes, sliced & seasoned with salt/pepper
- 80 large fresh basil leaves
COOKING INSTRUCTIONS:
Caprese Portobello Sandwich
- For portobello marinade: In a small bowl, combine oil, vinegar, garlic powder, dried basil, dried oregano, salt, and pepper. Whisk until well-integrated. Add portobello caps to large food storage bag then pour in marinade. Seal bag then carefully toss portobello in marinade. Let marinade for at least 30 mins, occasionally tossing portobello in marinade.
- For garlic aioli: In a small bowl, combine garlic clove, mayo, lemon, and salt and pepper to taste. Whisk until well-integrated. Refrigerate until ready to serve.
- To grill portobello: Preheat grill to medium heat. Grill each portobello round side-down for 3-5 minutes. Flip and top each portobello with 2 slices of fresh mozzarella. Grill for another 3-5 minutes or until cheese is melted. Remove from grill and set aside.
- To toast ciabatta: On grill, toast cut side of ciabatta rolls for 60-90 seconds or until lightly golden brown. Remove and set aside.
- To build Caprese Portobello Sandwich: Slather both cut sides of ciabatta roll with garlic aioli. Top heel of ciabatta roll with 10 basil leaves, 1 large tomato slice (salt and pepper them to taste), 1 grilled portobello, and crown of ciabatta roll. Repeat with remaining ingredients. Enjoy!
