This Carrot Cookie Ice Cream Sandwich just might make the Easter Bunny act a fool. Rabbits are generally docile creatures, but have you ever seen one ears-deep in a sugar rush? The way their eyes twitch and their thumper feet claw at you, you’d think they were on bath salts and from Florida. Or just from Florida. Suddenly the kids are running around screaming and crying cuz it ain’t Uncle Jack in that bunny costume anymore. It’s a bloodthirsty maniac with melted ice cream and cookie crumbs all over his fake rabbit face. And nothing can stop him. Not even an insulin shot.

Ingredients
- 1.5 cups carrot, freshly grated
- 1 cup brown sugar
- 1 cup granulated sugar
- 1 cup butter, softened
- 2 eggs, beaten
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla
- 1 cup sweetened coconut flakes
- 1/2 cup chopped walnuts
- 3 cups quick-cook rolled oats
- 1 Tbsp cinnamon
- 1 tsp ginger powder
- 1 gallon vanilla ice cream
COOKING INSTRUCTIONS:
Carrot Cookie Ice Cream Sandwich
- Preheat oven to 375ºF.
- Wrap carrots in paper towel and squeeze to drain. Set aside.
- In a medium bowl, blend sugars and butter using a hand mixer. Mix in eggs.
- In a separate medium bowl, combine flour, baking powder, baking soda, and salt. Using a spatula, combine dry mix into sugar/butter mixture. Mix in vanilla, nuts, coconut, oats, carrots, cinnamon, and ginger until well-combined.
- On a greased cookie sheet, drop 2 Tbsp-sized scoops of cookie dough. Be sure to space out enough so that they can spread without touching each other. Bake for 8-12 minutes, or until slightly golden. Remove from oven and let cool.
- Put cookies in freezer for 15-20 minutes to chill them enough so that ice cream doesn’t melt too quickly.
- To make an ice cream cookie sandwich: cut away the carton container so that just the ice cream is left. Slice ice cream into 1.5” to 2” layers. Using a ring mold or cookie cutter, cut cookie-sized slabs from layers. Lay 1 cookie upside down. Top cookie with ice cream then top ice cream with another cookie to make a sandwich. Repeat with remaining ingredients. Be sure to get cookies in freezer as quickly as possible to prevent a melting mess.
- Freeze sandwiches for at least 4 hours or until ice cream is firm. Enjoy!
