Cheeseburger Nachos with Mac Sauce Recipe

When we found out that Mount Olive’s Pickle Salsa existed, we knew the first thing we were gonna make with it—Cheeseburger Nachos with Mac Sauce. Sarah has dedicated much of her adulthood to becoming a militant connoisseur of both storebought salsa and pickles, and when she first tasted this pickle salsa, she wept. Then yelled at me for trying to take a bite. Then wept again. And to honor that spiritual ecstasy that overcame her, we bring you two of your favorite forbidden meals in one, joined forever by the salsafied pickle.

Ingredients

Mac Sauce

  • 1/2 cup mayo
  • 3 Tbsp Mt. Olive sweet gherkin pickles, finely minced
  • 2 tsp yellow mustard
  • 2 tsp ketchup
  • 1/2 tsp granulated sugar
  • 1 tsp white vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt

 

Smash Burgers

  • 1 lb ground beef (80/20)
  • Seasoned salt
  • 1 onion, slivered

 

Queso Amarillo

  • 1/2 lb yellow American cheese (chopped)
  • 1/2 cup half and half
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt
  • Pepper

 

Cheeseburger Nachos Build

  • Tortilla chips
  • Smash burger meat
  • Queso Amarillo
  • 3/4 head of iceberg lettuce, shredded
  • Roma tomatoes, diced
  • Mac sauce
  • Mt. Olive Medium Pickle Salsa

COOKING INSTRUCTIONS:
Cheeseburger Nachos with Mac Sauce

Mac Sauce

  1. Add all ingredients to a small bowl. Stir together until well-combined. Refrigerate until ready to use.

 

Smash Burgers

  1. Form 1/2 lb sized balls of beef. Be sure to loosely form them into a ball without overworking the meat. Do not pack them into a ball. Ground beef should be refrigerator cold when you form the balls and then immediately cooked. Do not let it get warm.
  2. Heat cast-iron skillet over high heat. Get pan hot enough that a water bead dances for a second before evaporating (rather than immediately turning into steam).
  3. Cook 1 ball per batch by smashing it to 1/2” thickness in pan. Season top side with seasoned salt to taste. Add slivered onions. Cook for about 90 seconds or until crisp sear forms on pan-side of meat. Flip and season with seasoned salt. Cook for another 90 seconds or until desired doneness. Remove from skillet and repeat with other ball.

 

Queso Amarillo

  1. In a pan over medium-low heat, add cheese and half and half. While frequently stirring, cook until cheese is melted and half and half is fully integrated.
  2. Stir in spices. Remove from heat and serve immediately over nachos.

 

Cheeseburger Nachos Build

  1. On a sheet pan lined with parchment paper, spread out tortilla chips.
  2. Using a spatula, break up burger meat into small chunks. Scatter over top of tortilla chips.
  3. Ladle desired amount of queso over burger meat.
  4. Top with lettuce then tomatoes.
  5. Spoon desired amount of Mac sauce over lettuce and tomatoes.
  6. Top with pickle salsa.
