Ingredients
- 1.5 lbs peewee potatoes
- 1 Tbsp olive oil + more
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Coarse salt
- Cracked pepper
- 1/2 cup sharp yellow cheddar, freshly shredded
- Fresh chives
COOKING INSTRUCTIONS:
Cheesy Smashed Potatoes
- Bring medium pot of salted water to boil. Boil potatoes for 13-15 minutes, or until easily pierced with a fork.
- Preheat oven to 425ºF.
- Drizzle 1 Tbsp olive oil over rimmed baking sheet. Place potatoes evenly spaced on sheet. Using the bottom of a glass or mason jar, gently smash potatoes to 1/2” thickness. Drizzle a little olive oil over each potato, then season with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Bake potatoes for 30-35 minutes, or until golden on the edges.
- Remove from oven and evenly top with cheese.
- Change oven setting to broil on high. Broil potatoes for 1-2 minutes or until cheese is melted and slightly browned. Remove from oven and garnish with fresh herbs. Serve immediately.
