Ingredients

  • 1.5 lbs peewee potatoes
  • 1 Tbsp olive oil + more
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Coarse salt
  • Cracked pepper
  • 1/2 cup sharp yellow cheddar, freshly shredded
  • Fresh chives

Cheesy Smashed Potatoes on a baking tray

COOKING INSTRUCTIONS:
Cheesy Smashed Potatoes

  1. Bring medium pot of salted water to boil. Boil potatoes for 13-15 minutes, or until easily pierced with a fork.
  2. Preheat oven to 425ºF.
  3. Drizzle 1 Tbsp olive oil over rimmed baking sheet. Place potatoes evenly spaced on sheet. Using the bottom of a glass or mason jar, gently smash potatoes to 1/2” thickness. Drizzle a little olive oil over each potato, then season with garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Bake potatoes for 30-35 minutes, or until golden on the edges.
  5. Remove from oven and evenly top with cheese.
  6. Change oven setting to broil on high. Broil potatoes for 1-2 minutes or until cheese is melted and slightly browned. Remove from oven and garnish with fresh herbs. Serve immediately.
