Ingredients

Chicken Cordon Bleu Sandwich

  • 2 chicken breasts
  • Garlic powder, to taste
  • Salt, to taste
  • Pepper, to taste
  • 6 slices of Black Forest ham
  • 4 slices of Swiss cheese
  • 3/4 to 1 cup seasoned Panko
  • 1/3 to 1/2 cup mayonnaise
  • 2 Tbsp Dijon mustard
  • Chicken Cordon Bleu Sauce
  • 4 kaiser rolls
  • Freshly chopped parsley, for garnish

 

Chicken Cordon Bleu Sauce

  • 3 Tbsp butter
  • 1 Tbsp flour
  • 3/4 tsp Better Than Bouillon
  • 1 cup heavy whipping cream
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • Salt, to taste
  • Pepper, to taste
  • 2 Tbsp Dijon mustard

COOKING INSTRUCTIONS:

Chicken Cordon Bleu Sandwich

  1. Preheat oven to 375ºF.
  2. Using a tenderizer, tenderize each chicken breast so that it’s even and about 1/2” thick. Season both pieces with garlic powder, salt, and pepper.
  3. On each piece of chicken, lay 3 slices of ham then 2 slices of cheese. Starting at one end of the chicken, tightly roll it up and over itself like a sleeping bag. Once chicken is completely rolled up, secure its seam by threading toothpicks where the end of the chicken overlaps with the layer of chicken beneath it (reference our video on this page). We used 3-5 toothpicks per breast.
  4. Add panko to a wide, flat bowl (something like a pasta bowl), then set aside. In a separate small bowl, mix together mayonnaise and mustard until fully integrated. Spread the dijonnaise over both chicken rollups so that they’re evenly coated. Dredge chicken in Panko until fully coated with breadcrumbs then transfer to a parchment-lined baking sheet. Spray all over tops of Chicken Cordon Bleu with cooking spray.
  5. Bake chicken in oven for ~45 mins, or until coating is golden brown and chicken has reached an internal temperature of 165ºF. Remove from oven and let cool for a few minutes so that they’re able to be handled.
  6. Slice each Cordon Bleu into ~1” thick pieces.
  7. To build Chicken Cordon Bleu Sandwich: Place 2 slices of Chicken Cordon Bleu on the heel of 1 kaiser roll. Top with Cordon Bleu Sauce to taste, then parsley to taste, then the roll’s crown. Repeat with remaining ingredients. Enjoy!

 

Chicken Cordon Bleu Sauce

  1. (While Chicken Cordon Bleu is baking) melt butter in a small pan over medium heat. Whisk in flour until well-combined and cook for a few minutes to begin to give the flour some color. Stir in Better Than Bouillon and cook for about 1 min.
  2. Stir in remaining ingredients and bring to a gentle simmer. Continue simmering for 3-5 mins, or until sauce reaches desired thickness. Keep sauce warm on stove until ready to serve.
