Thai Peanut Sauce

  • 1/2 can full-fat coconut milk
  • 1/2 cup peanut butter
  • 2 Tbsp white sugar
  • 2 Tbsp soy sauce
  • 2 Tbsp rice vinegar
  • 1 Tbsp red curry paste
  • 1/2 lime, juiced
  • Water, as needed

 

Chicken Satay

  • ~1.3 lbs chicken tenderloins
  • 1/2 can full-fat coconut milk
  • 1/2 head garlic, minced
  • 2 Tbsp ginger paste
  • 2 Tbsp white sugar
  • 2 Tbsp red curry paste
  • 1 tsp soy sauce
  • Salt, to taste

COOKING INSTRUCTIONS:
Chicken Satay with Peanut Sauce

Thai Peanut Sauce

  1. Add all ingredients to a medium pan. Place pan over Charbroil grill’s sideburner over medium heat.
  2. Whisk until ingredients are well-combined—sauce will integrate better as heat melts the peanut butter.
  3. Once sauce reaches desired thickness, transfer to a small serving bowl. If sauce becomes too thick while cooking, whisk in 1/4 cup water at a time until desired thickness is reached.

 

Chicken Satay

  1. In a small bowl, add all ingredients except chicken. Whisk until well-combined. Transfer to a resealable storage bag, then add chicken and ensure it’s fully coated with marinade. Marinate for at least 2 hours. Overnight is best.
  2. Preheat Charbroil grill to medium-high heat.
  3. Grill chicken for 3-4 mins per side, or until internal temperature reaches 165ºF.
  4. Remove from grill and let rest 5 mins. Serve garnished with cilantro and a serving dish of Thai Peanut Sauce. Enjoy!
