Chicken Wings with Chinese Plum Sauce Recipe

These Chicken Wings with Chinese Plum Sauce take us back to a sports bar Sarah worked at when we lived in Wilmington, NC. The pub food was really good, and the place had a bunch of well-maintained sand volleyball courts, too. The vibe was incredible. Eventually, however, the place rebranded and fired most of its employees, including Sarah. You know how it goes. People with money can pull the rug out from under a bunch of other people, then go home and sleep like babies. We were actually driving back from a long weekend when Sarah got the phone call telling her she was canned. This was almost a decade ago—just when rental prices were beginning to skyrocket everywhere in America. And Wilmington was a town where people our age lived and died by the service industry. To lose your job unexpectedly like that was no joke. But it’s OK. Because our wings are better.

Ingredients

Chinese Plum Sauce

  • 1 Tbsp grapeseed oil
  • 4 garlic cloves, minced
  • 2” ginger root, minced
  • 9.3 oz Kikkoman Plum Sauce
  • 1 orange, juiced
  • 2 Tbsp tamari
  • 1/2 tsp sesame oil
  • 1/2 tsp crushed red pepper
  • 1/2 tsp Chinese Five Spice

 

Chicken Wings

  • 5 lbs chicken wings
  • Chinese Plum Sauce
  • White sesame seeds, for garnish
  • Scallions, thinly sliced for garnish

COOKING INSTRUCTIONS:
Chicken Wings with Chinese Plum Sauce

Chinese Plum Sauce

  1. Wait until 5 minutes before wings are done cooking before building sauce.
  2. In a small pan, heat oil over medium-high heat. Add garlic and ginger and cook for 2-3 minutes (without burning). Add rest of ingredients, then whisk together until well-combined. Bring to simmer and simmer until sauce thickens then remove from heat and toss wings immediately.

 

Chicken Wings

  1. Break down chicken wings into drumsticks and flats. Remove wing tips from flats.
  2. Preheat air fryer to 380º.
  3. In a large bowl, toss wings in oil, then salt and pepper to taste.
  4. Cook half of wings in air fryer for 30 minutes, flipping halfway. Remove from heat and, in a large bowl, toss in plum sauce. Serve immediately garnished with sesame seeds and scallions. Repeat with other half of wings.
