Ingredients
- 2 Tbsp cornstarch
- 1/2 tsp dry mustard
- 1.5 tsp salt
- 2 tsp pepper
- 2.5 cups whole milk
- 2 Tbsp butter
- 2 Tbsp Mr Bing Chili Crisp
- 1.5 cups Monterey Jack, freshly shredded
- 1.5 cups yellow sharp cheddar, freshly shredded
- ~2 cups macaroni elbows, al dente
COOKING INSTRUCTIONS:
Chili Crisp Mac N Cheese Bites
- Preheat oven to 375º.
- Bring a pot of salted water to boil. Cook pasta according to package instructions. Strain then set aside.
- Grease a baking dish, add cooked pasta, then set aside.
- In a saucepan, combine cornstarch, dry mustard, salt, and pepper.
- Turn burner to medium heat, then add milk to pan and whisk until well-combined. Continue whisking until milk begins to lightly bubble and thicken. Whisking continuously, add butter until well-combined. Stir in Mr Bing. Then add cheese slowly while still whisking.
- Once cheese is fully melted, set heat to low and stir occasionally in order to keep cheese sauce from solidifying.
- Spray a mini muffin pan with cooking oil. Scoop mac n cheese into each pocket (fill to top or just above).
- Bake for 20-25 minutes or until top is lightly browned and bubbling and sides lightly browned. Remove from oven and let set for at least 10 minutes. Repeat with remaining mac n cheese.
