Chipotle Chicken Tots Recipe

Ingredients

Chipotle Chicken

  • 1 Tbsp olive oil
  • 2 chicken breasts
  • 1 onion, diced
  • 3-4 chipotle peppers in adobo sauce, finely chopped
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste
  • 10 oz can red enchilada sauce

 

Cilantro Lime Crema

  • 1/2 cup sour cream
  • 1 Tbsp fresh cilantro, finely chopped
  • 1 tsp lime zest

 

Chipotle Chicken Tots

  • 96 tater tots
  • Crockpot Chipotle Chicken
  • Colby Jack cheese, freshly shredded
  • Cilantro Lime Crema

COOKING INSTRUCTIONS:

Chipotle Chicken

For Crockpot

  1. Add all ingredients to crockpot. Cover and cook on low for 4-5 hours OR on high for 2-3 hours.
  2. Once chicken is finished, shred it and toss it in sauce. Set aside.

For Pressure Cooker

  1. Add all ingredients to pressure cooker. Cover and cook on high pressure for 8 minutes, then let naturally release for at least 20 minutes.
  2. Once chicken is finished, shred it and toss it in sauce. Set aside.

 

Cilantro Lime Crema

  1. Combine all ingredients in a small bowl. Mix until well-integrated. Chill until ready for use.

 

Chipotle Chicken Tots

  1. Preheat oven to 425ºF.
  2. Grease two mini-muffin pans and place 2 tater tots in each cup. Bake for 10 minutes. Remove from oven.
  3. Using a muddler, smash tater tots down into each cup to form an even, tightly packed layer. Top each cup with Crockpot Chipotle Chicken so that the cup is almost completely filled. Top with Colby Jack. Bake for another 10 minutes or until cheese is melted and just beginning to brown. Remove from oven and let cool for a few minutes.
  4. Remove each Chipotle Chicken Tot from its cup and transfer to serving plate. Top each Tot with Cilantro Lime Crema. Serve immediately. Enjoy!
