Ingredients
- 4 oz semisweet chocolate, chopped into small pieces
- 1 Tbsp Luxardo Maraschino cherry syrup from jar
- 2 Tbsp Luxardo Maraschino liqueur
- 1 Tbsp butter
- 1 Tbsp light corn syrup
- 1 Tbsp sugar
- 2 large eggs
- Whipped cream, for garnish
- Chocolate shavings, for garnish
- Maraschino cherries, for garnish
COOKING INSTRUCTIONS:
Chocolate Cherry Mousse
- In a small pan over low heat, combine chocolate, Maraschino syrup, Maraschino liqueur, butter, sugar, and corn syrup. Melt the chocolate while whisking until mixture is smooth. Transfer to a bowl and let cool for a few minutes.
- Separate the eggs by placing whites into separate bowl, then adding yolks to the chocolate mixture. Whisk whites until soft peaks form. Beat yolks into chocolate mixture. Gently fold in half of the egg whites. Then gently fold in remaining whites. Be sure not to overmix so that mousse remains fluffy.
- Transfer mousse to serving glasses/bowls, then cover in plastic wrap and refrigerate for at least two hours. Serve garnished with whipped cream, chocolate shavings, and maraschino cherries.
