Cilantro Lime Salmon Burger Recipe

This Cilantro Lime Salmon Burger says it’s OK to eat fish, ’cause they don’t have any feelings. That’s actually just a Nirvana lyric, not a scientific statement. But if you’re into unattainable bliss, then this burg is for you. One bite and all suffering caused by desire will leave you. Almost. There will always be the desire to take another bite. And thus the circle continues.

Ingredients

  • 2.5-3 lb whole salmon fillet
  • 3 Tbsp olive oil
  • Garlic powder, to taste
  • Dried oregano, to taste
  • Salt, to taste
  • Pepper, to taste
  • 1/2 cup mayonnaise
  • 1.5 tsp Worcestershire sauce
  • 1 Tbsp garlic powder
  • 1/2 Tbsp onion powder
  • 1/2 Tbsp chili powder
  • 1/2 Tbsp cumin

  • 1 lime, zested & juiced
  • 3 large eggs, lightly beaten
  • 1.5 cups panko
  • 1/3 cup fresh cilantro, finely chopped
  • Canola oil, for frying
  • 8 brioche buns
  • Lettuce
  • Tomato
  • Creamy Salsa Verde

COOKING INSTRUCTIONS:
Cilantro Lime Salmon Burger

  1. Preheat grill to medium-high heat.
  2. Brush olive oil over front and back of salmon fillet. Season with spices on flesh side only.
  3. Grill salmon flesh-side down for 2-3 minutes. Flip and cook on skin side for another 2-3 minutes, or until cooked through. Remove from grill and let rest a few minutes. With a fork, flake salmon and set aside. Be sure to remove skin and discard.
  4. In a large bowl, combine mayo, Worcestershire, lime juice and zest, garlic powder, onion powder, chili powder, cumin, egg and cilantro. Mix until all ingredients are well combined. Add in flaked salmon and panko bread crumbs to the sauce and lightly fold to coat. Gently form 8 Salmon Burgers with your hands.
  5. In a cast iron pan over medium-high heat, add just enough canola oil to coat bottom of pan. Working 4 Burgers at a time, cook for 2 – 3 minutes on each side. Remove from heat and set aside. Repeat with remaining cakes.
  6. To build sandwich: Top 1 bun heel with lettuce, tomato, a Salmon Burger, Creamy Salsa Verde, then bun crown. Repeat with remaining ingredients. Enjoy!
