3 oz cream cheese, room temperature
1/6 cup white sugar
1/4 cup sour cream
1 tsp fresh lemon juice
1/4 tsp vanilla extract

(1) 17.5 oz can of ready-bake cinnamon rolls
1 fresh pineapple, chunked
2 Tbsp canola oil
2 Tbsp honey
1 tsp cinnamon
⅛ tsp cayenne
Cream Filling
Fresh kiwi slices
Fresh strawberry slices

Cream Filling

  1. Using an electric hand mixer, beat cream cheese and sugar in a medium bowl until smooth. Beat in sour cream, lemon juice, and vanilla until smooth. Chill until ready to serve.

  1. Preheat griddle on medium-low heat.
  2. Remove dough from can and separate cinnamon rolls.
  3. Using a greased rolling pin, roll out each individual roll to desired thickness. Lay each roll on a piece of wax paper.
  4. Lay each roll roll-side down on griddle, then remove wax paper from top and cook for ~2 mins each side, or until browned and cooked through but still slightly malleable.
  5. Remove from grill and drape each roll over the lip of a large bowl to create a taco shell.In a medium bowl, add all ingredients and toss until well-combined.
  6. Grill over medium heat, cook pineapple on all sides until lightly golden brown. Remove from heat and set aside.
  7. To build each taco: Fill taco shell with Honey-Glazed Pineapple, Cream Filling, kiwi, and strawberry to taste. Repeat with remaining ingredients. Serve immediately. Enjoy!
