Ingredients

Chili

  • 1 Tbsp oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 medium zucchini, halved and sliced
  • 6 jalapeños, finely diced
  • 1 lb baby portobello mushrooms, sliced
  • 1/2 head garlic, minced
  • 3/4 lb ground beef
  • 3/4 lb ground pork
  • 12 oz bag frozen corn
  • 2 15 oz cans black beans
  • 6 large Roma tomatoes
  • 2 Tbsp chili powder
  • 1 Tbsp cumin
  • 1 Tbsp dried oregano
  • 1/2 Tbsp smoked paprika
  • Salt
  • Pepper
  • 3 cups chicken stock
  • 30 oz tomato sauce

 

Queso

  • 1/2 pound American cheese (chopped)
  • 1/2 cup half and half
  • 2 Tbsp pickled jalapeño juice (from a jar of pickled jalapeños)
  • 2 Tbsp finely diced pickled jalapeños
  • 1/4 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp ground cumin
  • Salt
  • Pepper

 

Corn Chip Chili Cheese Burger

  • 2 lbs 80/20 ground beef
  • Garlic powder, to taste
  • Salt, to taste
  • Pepper, to taste
  • 6 brioche buns
  • 2 avocados, pitted & thinly sliced length-wise
  • Chili (leftover chili works too)
  • Queso
  • Corn chips

COOKING INSTRUCTIONS:
Corn Chip Chili Cheese Burger

Chili

  1. Preheat griddle to medium-high.
  2. In a large bowl, toss onion, bell pepper, zucchini, and jalapeños in oil, salt, and pepper
  3. Heat oil in a large pot over medium-high heat. Add onion, bell pepper, zucchini, and jalapeños then sauté until tender. Add mushrooms and cook until tender. Add garlic and cook until fragrant. Add ground beef and ground pork then cook fully through.
  4. Add corn, tomatoes, black beans, chili powder, cumin, oregano, smoked paprika, then salt and pepper to taste. Cook for 1-2 minutes. Stir in chicken stock and tomato sauce. Bring to a heavy simmer. Continue to simmer for 20-25 minutes or until flavors are fully developed. Keep chili warm until ready to serve.

 

Queso

  1. Preheat grill to medium-low.
  2. In a cast-iron pan, add cheese and half and half. While frequently stirring, cook until cheese is melted and half and half is fully integrated.
  3. Stir in spices, jalapeños, and jalapeño juice. Remove from heat and serve immediately over burgers.

 

Corn Chip Chili Cheese Burger

  1. Preheat grill to medium-high heat.
  2. Form ground beef into 6 equal balls. Place wax paper in the bottom of both Char-Broil burger press molds. Working 2 balls at a time, press into patties. Season with garlic powder, salt, and pepper.
  3. Grill for ~3 mins per side, or until desired doneness. Remove and let rest 5 mins.
  4. While patties are resting, quickly toast the cut side of each bun. Remove and set aside.
  5. To build each burger: top bun heel with avocado slices to taste, 1 patty, chili to taste, Queso to taste, corn chips to taste, then bun crown. Repeat with remaining ingredients. Serve immediately. Enjoy!
