Crispy Cheese Breakfast Tostada Recipe

This Crispy Cheese Breakfast Tostada will make you wake up early on a Sunday morning just to stuff your face and fall back asleep again. And then you’ll dream about waking up and doing it all over again.

  • 1/2 cup cheddar cheese
  • 1/2 cup monterey jack
  • 2 Tbsp butter, divided
  • 2 fajita size tortillas
  • 1 avocado, sliced
  • 6 slices Canadian bacon
  • 2 eggs

  • Scallions, sliced for garnish
  • Sriracha, for garnish

Crispy Cheese Breakfast Tostada

  1. In a small bowl, combine cheddar and monterey jack then toss until evenly distributed.
  2. Preheat Char-Broil Scissor Cart Gas Griddle to medium heat.
  3. Melt 1/2 Tbsp butter each in two separate cooking spots for tortillas. Place ½ cup cheese blend in shape of tortilla over melted butter spots. Press 1 tortilla each over both spots. Grill for 3-4 minutes or until cheese is browned and crispy enough to flip without cheese sliding around tortilla. Flip and grill other side of tortilla for another 30-60 seconds or until crisp but still malleable. Remove both tortillas from grill and set aside.
  4. On one half of grill, place Canadian bacon and cook for 1-2 minutes each side, or until reaches desired browning. Remove from grill and set aside.
  5. While Canadian bacon is cooking, melt 1/2 Tbsp butter each in two separate cooking spots for eggs. Crack 1 egg over each butter spot. Cook sunny-side up or over-easy. Remove from grill and set aside.
  6. To build each tortilla: Top with 3 Canadian bacon slices, 1 egg, ½ of avocado slices, scallions, and Sriracha. Enjoy!
