Cuban Sandwich Bites Recipe

These Cuban Sandwich Bites are all dressed up for your next holiday party! All you need is Mt. Olive Kosher Petite Dills, spicy breakfast sausage, Black forest ham, Swiss cheese, and some homemade croutons. Skewer them up, then serve them in cocktail cups with a dab of yellow mustard. One bite brings you everything you love about your favorite pickle-forward sandwich!

Ingredients

  • Sourdough loaf
  • Olive oil, to taste
  • Salt, to taste
  • Pepper, to taste
  • 1/2 lb ground spicy breakfast sausage
  • 7 slices of Black Forest ham (about 1 lb total)
  • 4-5 oz block of Swiss cheese, cut into bite-sized cubes
  • 7 Mt. Olive Simply Pickles Kosher Petite Dills

  • (27) 3.5” bamboo paddle picks
  • (27) 5 oz plastic party cocktail cups
  • Yellow mustard, for serving

COOKING INSTRUCTIONS:
Cuban Sandwich Bites

  1. Preheat oven to 375ºF
  2. To make croutons: Slice sourdough loaf into bite size pieces. In a large bowl, toss bread pieces in oil, salt, and pepper to taste so that the bread is evenly coated. Transfer bread to baking sheet and bake for about 6-7 mins or until bread begins to lightly brown, so that the exterior is slightly crispy and the center is still pleasantly chewy. Remove from oven and set aside.
  3. Preheat air fryer to 400ºF
  4. To make sausage meatballs: Working one piece at a time, roll ground sausage in your palms to form bite-sized meatballs. Air-fry sausage for 7-8 mins, or until internal temp reaches 160ºF. Remove from air fryer and set aside.
  5. To make pickle bites: Slice each pickle into 4 pieces—the size of the pieces should complement the other ingredients. Set aside.
  6. To make ham bites: Roll 1 piece of ham up. Slice into 5 equal pieces (about 1” long pieces). Set aside each rolled up cut so that it sits like a stack.
  7. To build Cuban Sandwich Bites: Slide 1 pickle piece toward the paddle end of the skewer, then 1 sausage meatball, then 1 cheese cube, then 1 ham bite, then crouton. Repeat with remaining ingredients.
  8. To serve Cuban Sandwich Bites: Tilt 1 cocktail cup at a 45º angle toward you, then squirt 1 tsp of mustard into bottom of the cup so that the mustard sits where the wall of the cup meets the base. Using a small silicon spoon or spatula, smear the mustard upward against the wall of the cup. You don’t want to the mustard over every inch of the cup’s wall. You just want to make one upward smearing motion. Place one Cuban Sandwich Bite in the cup opposite the mustard smear. Repeat with remaining skewers and cups. Serve immediately. Enjoy!
