Deep Fried Cheesecake Recipe

This Deep Fried Cheesecake is whatever you believe it is. Dressed-up. Dressed-down. Date night-ready. County fair-strutting. Humblebragging. It might’ve come from Japanese chefs doing a twist on helado frito. It might’ve come from the Texas state fair. Somebody stole it from somebody then everybody argued about who was which somebody. Have you walked outside lately, just after dusk, when night hasn’t fully set in, and you don’t have a cellphone to get angry at? Shut up and have some cheesecake.

Ingredients

  • 1/4 cup white sugar
  • 1 Tbsp cinnamon
  • 16 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup sugar
  • 2 Tbsp lemon juice (fresh-squeezed)
  • 1 tsp vanilla extract
  • (7-8) 8” flour tortillas

  • Oil, for frying
  • Melted butter, for brushing fried tortillas
  • Raspberry preserves

COOKING INSTRUCTIONS:
Deep Fried Cheesecake

  1. In a wide and shallow bowl, mix together sugar and cinnamon until well-integrated. Set aside.
  2. In a large bowl, add cream cheese, sour cream, sugar, lemon juice, and vanilla extract. Using an electric hand mixer, mix until well-integrated. Set aside.
  3. To fill Deep Fried Cheesecake: Lay each tortilla flat, then divide the cream cheese filling evenly between the tortillas by spreading it in a thick straight line that bisects the tortilla. Be sure to leave some room between the edge fo the tortilla and the end of the cream cheese line so that you’re able to roll the tortillas without squeezing out the filling.
  4. To roll Deep Fried Cheesecake: Take nearest edge of a tortilla and fold it over so that the edge of it covers the filling. Simultaneously tuck the edge of tortilla under toppings while pulling toppings closer to you. Fold in the sides of the tortilla over the initial fold (like an envelope). Roll the tortilla the rest of the way so that it is tightly packed and the sides are still tucked in.
  5. To fry Deep Fried Cheesecake: Fill a medium pot or large pan with 3” oil. Preheat oil to 360-375ºF. Maintain that temperature throughout the entire frying process. Fry half of the rolled tortillas at once for about 3-5 mins, or until outside of tortillas is a deep golden brown. Remove tortillas from oil, immediately brush them with butter, then roll them in cinnamon sugar until evenly coated. Repeat with other half of tortillas.
  6. To serve the Deep Fried Cheesecake: Slice each tortilla on the bias, then serve with raspberry preserves for dipping. Enjoy!
