Ingredients
Egg Salad
- 12 eggs
- 1/2 cup mayonnaise
- 2 Tbsp mustard
- 1 1/2 Tbsp sriracha
- Salt, to taste
- Pepper, to taste
Pimento Cheese
- 4 oz diced pimento peppers, drained
- 1/2 cup yellow sharp cheddar
- 1/2 cup yellow extra sharp cheddar
- ~2 Tbsp mayo
- 4 oz cream cheese
- 1 Tbsp onion, freshly grated
- 1/2 tsp Worcestershire
- 1/4 tsp garlic powder
- A few dashes of cayenne pepper

- 10-12 pieces of toasted bread
- 15-18 pickle chips

COOKING INSTRUCTIONS:

Egg Salad
- Add eggs to small pot and fill with water. Bring to boil. Boil eggs for 10 minutes. Remove from heat and pour out hot water. Leave eggs in pot and run cold water over them for 4-5 minutes.
- Peel eggs and set aside.
- Dice eggs and transfer to a medium bowl. Add mayo, mustard, Sriracha, salt and pepper. Mix until well-combined. Chill until ready to serve.
Pimento Cheese
- Using a wire mesh strainer, squeeze peppers to drain.
- In a small bowl, combine all ingredients and stir until well-combined. Chill until ready for use.
Egg Salad and Pimento Cheese Sandwich
- Top two pieces of toasted bread with pimento cheese. Top one of the pieces of bread with egg salad to taste, then 3 pickle chips, then the other piece of bread (pimento cheese-side down). Repeat with remaining ingredients. Enjoy!
