Ingredients
Fricken Wings
- 5 lbs chicken wings, separated into drums & flats
- 3 cups buttermilk
- 1 cup mayonnaise
- 1/4 cup hot sauce
- 2 Tbsp salt, divided
- 2 Tbsp pepper, divided
- 2 cups flour
- 1 cup cornstarch
- 2 Tbsp garlic powder
- 1 Tbsp onion powder
- 1 Tbsp smoked paprika
- 2 tsp cayenne pepper
- Vegetable or canola oil, for frying
Frickles
- 8 extra large dill pickles, cut into 1/2″ slices
- 1 cup buttermilk
- 1/4 cup mayonnaise
- 1/4 cup hot sauce
- 2 Tbsp pepper, divided
- 2 tsp salt
- 2 cups flour
- 2 Tbsp garlic powder
- 1 Tbsp onion powder
- 1 Tbsp smoked paprika
- 2 tsp cayenne pepper
- Vegetable or canola oil, for frying
Chipotle Ranch
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup buttermilk
- 1/2 lemon, juiced
- 1/2 tsp garlic powder
- 1/2 tsp chipotle powder
- 1/4 tsp dried dill weed
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 oz pickle juicers

COOKING INSTRUCTIONS:
Fricken Wings and Frickles
Fried Chicken Wings
- In a medium bowl, combine buttermilk, mayonnaise, hot sauce, 1 Tbsp + 1 tsp salt, and 1 Tbsp + 1 tsp pepper. Whisk until well-integrated. Add chicken wings and toss to coat completely. Marinate in fridge for at least 4 hours.
- Fill dutch oven or large pot with ~2” oil and heat to 350ºF.
- Combine flour, cornstarch, garlic powder, onion powder, smoked paprika, cayenne, 2 tsp salt, and 2 tsp black pepper in a small bowl. Working one chicken wing at a time, dredge completely with flour mixture then set on parchment-lined baking sheet.
- Working in 4 to 6 batches, fry chicken wings for 5-7 minutes, or until golden brown and internal temp is 165ºF. Be sure to maintain an oil temperature of 325º-350º throughout frying process. Remove from oil to drain on paper towel-lined plate. Repeat with remaining chicken.
Fried Pickles
- Fill dutch oven with ~2” oil and heat to 350ºF.
- Combine flour, cornstarch, garlic powder, onion powder, smoked paprika, cayenne, 2 tsp salt, and 2 tsp black pepper in a small bowl. Set aside.
- In a medium bowl, combine buttermilk, mayonnaise, hot sauce, and 1 Tbsp + 1 tsp pepper. Whisk until well-integrated. Set aside.
- Working one pickle slice at a time, dredge completely with buttermilk then flour mixture then set on parchment-lined baking sheet.
- Working in 3 or 4 batches, fry pickles for 2-3 mins, or until golden brown. Be sure to maintain an oil temperature of 325º-350º throughout frying process. Remove from oil to drain on paper towel-lined plate. Repeat with remaining pickle slices.
Chipotle Ranch
- Combine all ingredients in a small bowl and whisk until well-integrated. Chill until ready for use.
