Ingredients

Lemon Sugar Cookies

  • 1 cup butter
  • 3/4 cup vegetable oil
  • 1 1/2 cup granulated sugar, divided
  • 3/4 cup powdered sugar
  • 2 Tbsp water
  • 2 eggs
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1 tsp salt + a pinch
  • 5 1/2 cups flour
  • 2 lemons, zested & divided

 

Lemon Sour Cream Frosting

  • 1/2 cup room temp butter
  • 3/4 cup sour cream
  • 4 oz cream cheese
  • 2 cups powdered sugar
  • 1 lemon, zested and juiced
  • 1 Tbsp milk

COOKING INSTRUCTIONS:

Lemon Sugar Cookies

  1. Preheat oven to 350ºF.
  2. In a stand mixer bowl, add butter, oil, 1 1/4 cup granulated sugar, water, eggs, baking soda, cream of tartar, salt, flour, and zest of 1 lemon. Using a paddle attachment, mix until everything is well-combined. Dough should be a little crumbly and not sticky at all.
  3. Working one at a time, roll the dough into golf ball-sized balls and place each on a cookie sheet.
  4. Put 1/4 cup of sugar, zest of 1 lemon, and a pinch of salt in a dish and stir until well-combined. Using a drinking glass, press the bottom of the glass into the sugar mixture, then press firmly into the center of a dough ball. The dough should spill a little bit over the side of the glass. Repeat the process until all dough balls have been pressed with the sugar mixture.
  5. Bake for 8 minutes, or until just barely browning on the bottom. Transfer cookies to cooling rack. Once cool, apply Lemon Sour Cream Frosting.

 

Lemon Sour Cream Frosting

  1. Add all ingredients to a medium bowl. Using an electric mixer, mix until well-combined and smooth. Immediately frost cookies.
