These Game Day Shredded Chicken Nachos are a salute to our all-time favorite nachos from Front Street Brewery in Wilmingon, NC. No, they didn’t share their recipe with us, but we recreated as best we could the mix of brown sugar chicken, queso blanco, spicy sour cream, and all the usual accouterments of nachos supreme. Sweet and spicy and creamy and THE nachos to stuff your face with throughout the big game.

Ingredients

Shredded Chicken

  • 2 chicken breasts
  • 1 cup chicken broth
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1 tsp garlic
  • 1/2 cup brown sugar
  • 2 Tbsp soy sauce
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp cornstarch
  • 1 onion, diced

 

Queso Blanco

  • 1/2 pound white American cheese (chopped)
  • 1/2 cup half and half
  • 2 Tbsp pickled jalapeño juice (from a jar of pickled jalapeños)
  • 2 Tbsp finely diced pickled jalapeños
  • 1/4 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp ground cumin
  • Salt
  • Pepper

 

Shredded Chicken Nachos Build

  • Tortilla chips
  • Shredded chicken
  • Shredded cheese (we used cheddar and jack)
  • Black beans
  • Tomatoes, diced
  • Avocado, chopped
  • Queso blanco
  • Spicy sour cream (Taco sauce & sour cream mixed to taste)
  • Scallions, sliced

COOKING INSTRUCTIONS:
Game Day Shredded Chicken Nachos

Shredded Chicken

  1. Place chicken in pressure cooker and top with onion. Combine the rest of the ingredients in a bowl until well-integrated. Pour over chicken.
  2. Pressure cook for 8 minutes then naturally release pressure for at least 20 minutes.
  3. Shred chicken then set aside.

 

Queso

  1. In a pan over medium-low heat, add cheese and half and half. While frequently stirring, cook until cheese is melted and half and half is fully integrated.
  2. Stir in spices, jalapeños, and jalapeño juice. Remove from heat and serve immediately over nachos.

 

Shredded Chicken Nachos Build

  1. In a large serving dish, build nachos to taste in order of the ingredients. Serve immediately.
