Garlic Breadsticks with Loaded Dipping Oil Recipe

These Garlic Breadsticks with Loaded Dipping Oil are equally delicious and traumatic for us. We both used to serve tables in chain Italian restaurants, and 9/10 guests were willing to go to jail over not getting their garlic breadsticks fast enough. This is completely unrelated, but one time this couple came in—the man was probably in his 30s, the woman probably her 60s. They were celebrating their relationship anniversary. Well, everything was fine and beautiful until the woman started screaming at the man because he had talked to the server (who was also a woman). And by talk, we mean he asked for a drink refill or something pretty inconsequential. Then the woman stormed out into the parking lot with the man running after her (and of course half the service staff followed too lol). She got into her car and floored it and nearly ran the guy over. What’s the moral of the story? Only love is worth going to jail over. Not garlic breadsticks.

Ingredients

Garlic Breadsticks

  • 1 cup + 2 Tbsp warm water
  • 1 1/2 tsp instant yeast
  • 2 Tbsp sugar
  • 3 Tbsp unsalted butter, melted
  • 1 3/4 tsp salt
  • 3 cups bread flour, plus more as needed

 

Garlic Butter

  • 1 Tbsp olive oil
  • 5 cloves garlic, minced
  • 1/2 stick unsalted butter, melted
  • am.Niccoli Signature Salt, to taste

 

Loaded Dipping Oil

  • 1/2 cup + 3 Tbsp olive oil (divided)
  • 6 cloves garlic, minced
  • 2 Tbsp brown mushrooms, diced
  • 1 Tbsp marinated artichoke hearts, diced
  • 1 Tbsp fresh parsley
  • 1 tsp dried rosemary
  • 1 tsp dried basil
  • 1 Tbsp balsamic vinegar
  • am.Niccoli Signature Salt, to taste

COOKING INSTRUCTIONS:
Garlic Breadsticks with Loaded Dipping Oil

Garlic Breadsticks

  1. In a stand mixer bowl, combine water, yeast, sugar, butter, and salt. Let yeast activate for about 5 mins or until mixture gets puffy.
  2. Using a dough hook attachment on low speed, gradually add flour.
  3. Once flour is completely added, increase speed to medium and knead the dough for 10-15 mins, or until elastic. Add more flour if needed.
  4. Transfer dough to a lightly oiled bowl and cover. Let rest for 1-2 hours, or until doubled in size.
  5. Divide the dough into 12 equal portions. Roll each portion into an 8” rope. Place dough ropes on two baking sheets. Cover for about 1 to 1 1/2 hours, or until doubled in size again.
  6. Preheat oven to 400°F. Bake for 12-14 mins, or until golden brown.
  7. Remove from oven and brush with garlic butter.

 

Garlic Butter

  1. Mix together melted butter and sautéed garlic until well-combined.
  2. Brush breadsticks with garlic butter. Finish breadsticks with a sprinkle of am.Niccoli salt.

 

Loaded Dipping Oil

  1. In a small pan, add 2 Tbsp olive oil & garlic. Sauté until garlic is cooked and fragrant, but not browned. Transfer to ramekin. Set aside.
  2. In same small pan, add 1 Tbsp olive oil & mushrooms. Sauté until mushrooms are tender. Transfer to separate ramekin. Set aside.
  3. On a plate, layer mushrooms, artichoke, garlic, parsley, rosemary, and basil. Top with 1/2 cup of oil, balsamic vinegar, and salt.
  4. Use a breadstick piece to mix. Enjoy.
