General Tso’s Ramen Omelette Recipe

This General Tso’s Ramen Omelette is for when your inner 22-year-old wants to walk through a McDonald’s drive-thru at 2AM, but you’re a responsible 40 year old who is pretty sure you’ve ordered an Uber instead. And now you’re trying to figure out how close your driver is but you can’t find them in the app then suddenly your stone-sober spouse pulls up and says, “Get in, loser. We’re making some ramelettes.”

Ingredients

Pickled Veggies

  • 1/2 regular size daikon radish (or substitute 1/2 parsnip)
  • 2 cucumber
  • 3 carrots
  • 1 tsp salt
  • 1 cup rice vinegar
  • 3 Tbsp sugar
  • 1 cup water

 

Quick General Tso’s Chicken

  • 3 Tbsp sugar
  • 3 Tbsp soy sauce
  • 1 Tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1/2 tsp crushed red pepper
  • 1 cup chicken broth
  • 1/4 tsp orange zest
  • 2 Tbsp cornstarch
  • 1 Tbsp canola oil
  • 4 garlic cloves, minced
  • 2 Tbsp freshly minced ginger
  • ~12 frozen boneless chicken bites

 

General Tso’s Ramen Omelette (makes 2)

  • 1 Tbsp butter, divided
  • 2 Tbsp chili crisp, divided
  • 2 packs Maruchen Ramen noodles
  • 6 eggs
  • Quick General Tso’s Chicken
  • Pickled Veggies
  • Kewpie mayo, for garnish
  • Sriracha, for garnish
  • Sliced scallions, for garnish
  • Furikake, for garnish

COOKING INSTRUCTIONS:
General Tso’s Ramen Omelette

Pickled Veggies

  1. Slice daikon, cucumber, and carrots into 2” matchsticks. Combine with salt, vinegar, sugar, and water in a storable container. Refrigerate for at least 2 hours (half a day is best).

 

Quick General Tso’s Chicken

  1. In a small bowl, combine all ingredients except oil, garlic, and ginger. Whisk together until well-combined.
  2. In small pan over medium-high heat, add oil, garlic, and ginger. Cook until fragrant. Pour in liquid mixture and bring to simmer. Continue simmering to thicken sauce to desired consistency, whisking frequently. Remove from heat and add chicken, tossing to evenly coat. Set aside.

 

General Tso’s Ramen Omelette (makes 2)

  1. Cook 1 pack of ramen according to package directions. Do not season yet with seasoning packet.
  2. Once ramen has cooked, drain and transfer to a medium bowl. Season with seasoning packet and 1 Tbsp chili crisp. Toss to evenly coat.
  3. In a large pan over medium heat, melt 1/2 Tbsp butter. Add ramen and spread out evenly. Pour 3 scrambled eggs evenly over the ramen. Lift the pan and lightly swirl the egg/ramen mixture to evenly spread out the egg and shift it toward the bottom of the pan. Cook for 1-2 mins or until the egg has begun to set.
  4. Top with ~6 pieces of General Tso’s Chicken and Pickled Veggies to taste. Fold omelette in half. Immediately transfer to serving plate.
  5. Repeat with remaining ingredients for second General Tso’s Ramen Omelette.
  6. Garnish with mayo, sriracha, scallions, and furikake. Enjoy!
