Grilled Chicken Caesar Wrap Recipe

This Grilled Chicken Caesar Wrap takes all the flavors and textures you love about a Caesar Salad and wraps it up in a tortilla. Not only can you scale this recipe for an army of guests, but you can make it all in a half hour!

Ingredients

Grilled Chicken Caesar Wrap

  • Large flour tortillas
  • 5-6 stalks of kale, stem removed and leaves chopped
  • 1 cup seasoned panko
  • 2 Tbsp salted butter
  • 3/4 cup kalamata olives, halved
  • 1 cup grape tomatoes, halved
  • 1 cup Parmesan cheese, freshly grated
  • 1 cup jasmine rice
  • 2 chicken bouillon cubes
  • 1 1/2 cup water
  • 2 chicken breasts, marinated and grilled
  • Marzetti Simply Dressed Caesar Dressing

 

Caesar Marinade

  • 6 Tbsp grated Parmesan
  • 1 Tbsp sugar
  • 1 Tbsp garlic powder
  • 2 tsp onion powder
  • 2 tsp salt
  • 2 tsp white pepper
  • 1 tsp dry mustard
  • 1/3 cup canola oil
  • 2 Tbsp white vinegar
  • 1/3 cup water

COOKING INSTRUCTIONS:
Grilled Chicken Caesar Wrap

  1. Using a meat tenderizer, pound chicken breast to 1/2″-3/4″ thickness. Place in zipper bag and add all Caesar marinade ingredients. Shake bag until ingredients well-combined. Marinate chicken in fridge for a minimum of 20 minutes.
  2. Preheat grill to high heat. Grill chicken for 6-7 minutes each side or until thermometer reads 165°.
  3. In a small pot, combine rice, water, and bouillon. Bring to boil then reduce heat to low and cover. Allow rice to cook for 20 minutes. Remove from heat and set aside.
  4. In small pan, melt butter over medium heat. Add panko and stir to coat crumbs with butter. Toast panic while stirring frequently until crumbs are browned but not burnt. Remove from heat and set aside.
  5. In a large mixing bowl add kale, tomatoes, olives, freshly grated Parmesan and panko. Dress with Marzetti Simply Dressed Caesar Dressing and using hands or tongs, mix until everything is well-combined
  6. Wrap tortillas in a dampened (but not dripping) paper towel. Microwave for 20-30 seconds.
  7. On flour tortilla place a good amount of salad mixture topped with rice. Finish with thinly-sliced grilled chicken. Wrap and enjoy!
