Grilled Romaine Cobb Salad Recipe

This Grilled Romaine Cobb Salad turns the classic salad into a wedge with all the flavor flav of char marks. Salads don’t have to be boring. So don’t be a lame and treat your lettuce with some flame.

Ingredients
- 1 chicken breast, tenderized to 1/2″ thick
- Chicken marinade of choice
- 2 Romaine hearts, halved
- Italian dressing
- Parmesan, freshly grated
- Salt, to taste
- Pepper, to taste
- 1 large Roma tomato, chopped
- 1 avocado, halved & chopped
- 2 hard-boiled eggs, chopped
- Gorgonzola cheese, to taste
- 8 oz cooked bacon, chopped
- Ranch dressing, to taste
COOKING INSTRUCTIONS:
Grilled Romaine Cobb Salad
- Marinade chicken according to marinade instructions.
- Preheat Char-Broil Performance Series Grill & Griddle to medium-high heat.
- Grill chicken for 6-7 minutes per side, or until internal temp reaches 165ºF. Remove from grill and let rest at least 5 minutes.
- While chicken is cooking, on a plate, lay out romaine heart halves cut side-up. Liberally dress with Italian dressing. Then divide Parmesan between the romaine halves. Salt and pepper to taste. Using your fingers, work the dressing, seasoning and cheeses into the lettuce layers.
- Grill romaine hearts cut side-down for 1-2 minutes or until beginning to char (but not too dark or too wilted). Flip and cook for another 1-2 minutes. Remove from heat and set aside.
- To build a plate: Arrange 2 romaine hearts so that 1 heart is leaned against the other. Top with half of the chicken, tomatoes, avocado, eggs, gorgonzola, and bacon. Drizzle with ranch to taste. Repeat with remaining half of ingredients for second salad. Enjoy!
