Tzatziki Sauce

  • 1 large cucumber, grated
  • 1.5 tsp cumin
  • 1 tsp kosher salt
  • 2 cups plain Greek yogurt
  • 2 Tbsp lemon juice
  • 2 cloves garlic, minced
  • 4 Tbsp freshly minced dill

 

Gyro Crunchwrap Supreme

  • 1 lb ground lamb
  • 1 Tbsp garlic powder
  • 1 Tbsp cumin
  • 1 Tbsp paprika
  • 1 Tbsp ground coriander
  • 1/2 Tbsp onion powder
  • 1 tsp cinnamon
  • 1 tsp cayenne
  • 1 tsp salt
  • 1 tsp pepper
  • 4 burrito size flour tortillas
  • 8 oz feta cheese
  • 17 oz hummus of choice, divided
  • Pita chips
  • Tzatziki Sauce
  • Shredded lettuce, for topping
  • Diced tomato, for topping
  • Minced onion, for topping
  • Kalamata olives, pitted & sliced into rings
  • 4 fajita size flour tortillas
  • 4 Tbsp butter, divided

Tzatziki Sauce

  1. In a medium-sized bowl, combine all ingredients and mix until well-integrated. Chill in refrigerator until ready for use.

  1. Preheat griddle to medium heat.
  2. In a medium bowl, mix lamb with spices until evenly distributed. Stirring occasionally, grill lamb until completely cooked through. Remove from heat and set aside.
  3. How to build a Gyro Crunchwrap Supreme: Lay 1 burrito tortilla flat. While topping it, be sure to leave about 2” of space between the filling and the edge of the tortilla (or the distance between the edge of the smaller flour tortilla and the edge of the larger burrito tortilla). Top burrito tortilla with 1/4 of lamb, ~2 Tbsp freshly crumbled feta, 3 Tbsp hummus, a large handful of pita chips, 1/4 cup Tzatziki Sauce, then lettuce, tomato, onions, and kalamata olives to taste.
  4. How to fold a Gyro Crunchwrap Supreme: Place 1 fajita tortilla on top of the filling, then press down evenly over it to pack the filling more tightly. Gently fold the larger tortilla over top of the smaller tortilla to create pleats. Flip crunchwrap over and lay seam-side down until ready to grill. Repeat with remaining ingredients.
  5. To griddle a Gyro Crunchwrap Supreme: Melt butter on griddle over medium heat. Working two crunchwraps at a time, brown crunchwrap seam-side down for ~2 mins, or until the other golden brown. Then flip and repeat with other side. Repeat with other 3 crunchwraps. Serve immediately garnished with more Tzatziki Sauce. Enjoy!
