Ham and Cheese Omelette Bites Recipe

These Ham and Cheese Omelette Bites were inspired by an appetizer we got at a farm restaurant in Italy. It’s where we ate our first dinner in country, and also where we each ordered a primo and secondo without knowing just how FARM-SIZED those plates would be. But our dish is meant to be enjoyed any time of the day, especially when you’re not slumped over at the table because you’ve already eaten enough food to temporarily launch your soul from your body.

Ingredients
- 1 Tbsp olive oil
- 3 eggs, scrambled
- Salt
- Pepper
- 4 deli-sliced pieces of Black Forest Ham
- 1/4 cup aged havarti, freshly grated
- Chives, freshly chopped
COOKING INSTRUCTIONS:
Ham and Cheese Omelette Bites
- Scramble eggs in a small bowl with salt and pepper to taste.
- Heat oil in large nonstick pan over medium heat. Pour in egg and rotate pan so that egg spreads out evenly. As egg solidifies, lift edges to allow liquid to drain onto surface of pan. Repeat until egg is fully cooked through and no liquid remains.
- Top with Havarti then immediately transfer to large cutting board. Top with ham then delicately roll up egg into tight log.
- Place log seam-side down. Slice into pinwheels. Serve immediately topped with chives.
