Hangry Meatloaf Sandwich Recipe

Our Hangry Meatloaf Sandwich actually starred in a food-based remake of She’s All That. All we had to do was throw some glasses and a terrible wig on a hot piece of meat and nobody would be the wiser. Veggie Prinze, Jr. played an avocado that had recently been dumped by his garden salad girlfriend but was convinced she was replaceable by any food in the pyramid. His Omega-3 buddies bet him he couldn’t turn a pan of meatloaf into a craveable dish in an hour and a half. But after slapping some bread, cheese, and BBQ on her, that meatloaf was the talk of the table. Sure, she found out that she’d started out as merely a bet for Veggie Prinze, Jr., but now she’s pregnant and Veggie is gonna have to skip college for a life in the oilfields. The End.

Ingredients

Meatloaf

  • 1 Tbsp olive oil
  • 1 onion, diced
  • 1/2 head garlic, minced
  • 2 Tbsp fresh parsley, chopped
  • 1 tsp dried rosemary, chopped
  • 2 tsp salt
  • 1 tsp black pepper
  • 1/3 cup milk
  • 1 Tbsp tomato paste
  • 3 Tbsp Worcestershire sauce
  • 2 lbs 85 % lean ground beef
  • 2/3 cup bread crumbs, plain
  • 2 eggs, beaten

 

Garlic Aioli

  • 1 clove garlic, minced
  • 1/4 cup + 2 Tbsp mayonnaise
  • 1/2 lemon, juiced
  • Salt
  • Pepper

 

Meatloaf Sandwich

  • 2 slices Italian round boule loaf
  • Garlic Aioli
  • (2) 1” thick Meatloaf slices
  • 2 slices Havarti cheese
  • BBQ sauce

COOKING INSTRUCTIONS:
Hangry Meatloaf Sandwich

Meatloaf

  1. Heat oil in a large pan over medium-high heat. Sauté onions until translucent. Add garlic and cook until fragrant.
  2. Turn off heat and stir in parsley, rosemary, salt, pepper, milk, tomato paste, and Worcestershire sauce. Allow to cool.
  3. Preheat oven to 325ºF.
  4. In a large bowl, combine onion mixture with beef, breadcrumbs, and eggs.
  5. Transfer mixture to a greased bread pan and spread evenly.
  6. Bake for 60-70 mins or until 160ºF internal temp. Place pan of water beneath meatloaf rack to keep top from cracking.
  7. Remove from heat and let cool for a few minutes. Drain off excess grease. Set aside.

 

Garlic Aioli

  1. In a small ramekin, mix all ingredients until well-combined. Chill until ready for use.

 

Meatloaf Sandwich

  1. Heat oven broiler on high.
  2. Slather aioli on one side of both bread slices.
  3. Place meatloaf slices on bottom bread slice. Top each meatloaf slice with a slice of Havarti cheese. Drizzle BBQ sauce on top of cheese.
  4. On a foil-lined baking sheet, place sandwich without top slice on it. Place top slice aioli side up on sheet. Broil for about 1-2 minutes. Remove from oven and put top slice aioli side-down on sandwich. Return to oven and broil for about 1 minute or until beginning to brown. Flip sandwich and repeat with other side. Remove from oven and serve immediately.
