Hangry Shrimp Avocado Salad Recipe

Our Hangry Shrimp Avocado Salad is pretty much ceviche for people who don’t like ceviche (the raw seafood part). It’s also an homage to the first time we ever went to Limones, our favorite restaurant in Western NC. Despite having been married for 4 or 5 years at that point, we still hadn’t fully developed our restaurant ordering strategy. And by strategy we mean creating the perfect conditions for Sarah to actually make a choice about which food to share. Zach had made the mistake of being too gentlemanly in deferring to Sarah on which appetizer to get. Sarah got option paralysis, then blurted out “Why don’t you just be a man and pick one?” [Insert Zach’s BINCH PLEASE face]. According to her, she’d meant why didn’t Zach just be like other guys and pick one instead of being democratic? Well, it was too late. Zach’s eyes shot straight to the ceviche section of the menu, because Sarah hates ceviche. And he didn’t pick just any ceviche—he went with scallops ceviche. Sarah cried. Zach felt bad. They made up in a matter of a few minutes, then enjoyed the best food in Asheville. And that, friends, is how Zach came up with the strategy of giving Sarah only two or three options to choose from.

Ingredients

  • 2 lbs of Jumbo shrimp
  • Wild Fork Spicy Mojo seasoning
  • 1/4 medium onion, finely diced
  • 1 clove garlic, minced
  • 2 avocados, chopped into 1/2” pieces
  • 5 roma tomatoes, deseeded and diced into 1/4” pieces
  • 1/2 English cucumber, diced into 1/4” pieces
  • 1 large jalapeño, finely diced

  • 2 limes, juiced
  • 1 Tbsp cilantro, chopped
  • Salt
  • Pepper

COOKING INSTRUCTIONS:
Hangry Shrimp Avocado Salad

  1. Season a medium pot of water heavily with Spicy Mojo seasoning. Bring to boil. Boil shrimp until pink. Drain and let cool. Cut into 3/4” pieces. Set aside.
  2. Add shrimp and rest of ingredients to a large bowl. Toss until well-combined. Cover and chill for at least 2 hours. Enjoy.
