Ingredients
Ranchero Sauce
- 1 tablespoon olive oil
- 2 shallots, peeled and chopped
- 6 cloves garlic, minced
- 15 ounces tomato sauce (1 can)
- 12 ounces roasted red peppers (1 jar)
- 4.5 ounces chopped green chiles (1 can)
- 1 cup chicken stock
- 1 Tbsp ground cumin
- 1 Tbsp brown sugar
- 1 tsp liquid smoke
- 1/2 cup heavy cream
- Salt
- Pepper
Huevos Rancheros Build
- Tostadas, store-bought
- Refried beans
- Queso fresco
- Cilantro, fresh
- Avocado, sliced
- Fried egg
COOKING INSTRUCTIONS:

Ranchero Sauce
- Place a sauté pan over medium-high heat and add the oil and shallots. Sauté the shallots until slightly translucent. Add the garlic and sauté until fragrant.
- Add all remaining ingredients to the pan, except for the heavy cream. Simmer the ranchero sauce for 10 minutes. Remove from heat and allow to cool for a few minutes.
- Using an immersion blender, purée the ranchero sauce until smooth. Then stir in heavy cream. Salt and pepper to taste.
Huevos Rancheros Build
- Lay one tostada flat. Spread refried beans over it, then top with ranchero sauce. Top with queso fresco and cilantro.
- Lay another tostada on top of the first. Spread refried beans over it, then top with ranchero sauce. Add avocado slices, queso fresco, then top with fried egg and cilantro. Serve.
