Inside Out Grilled Cheese Recipe
This Inside Out Grilled Cheese is that childhood classic all grown up and ready for its close-up. Gooey cheese on the inside, golden brown cheese on the outside, and Mr. Bing’s chili finesse in every bite. Did we mention bacon?

Ingredients
- 1 lb thick-cut bacon
- 1 stick butter
- 3 Tbsp Mr. Bing chili crisp
- Fresh-baked sourdough bread, sliced
- Monterey jack, freshly shredded
- Gouda, freshly shredded
- 1 large heirloom tomato, diced
- Butter, for cooking
COOKING INSTRUCTIONS:
Inside Out Grilled Cheese
- Preheat oven to 400ºF. Lay out bacon on parchment-lined baking sheet. Bake for 18-20 minutes or until desired doneness. Be sure to rotate pan halfway through. Remove from oven. Let cool then crumble. Set aside.
- In a small bowl, add butter and Mr. Bing. Using a hand mixer, cream together until well-combined. Set aside.
- Spread Mr. Bing butter on one side of a piece of bread. Repeat with another piece of bread. The buttered sides will be the inside of the sandwich. Set aside.
- Melt regular butter in pan over medium heat. Lay both pieces of bread Mr. Bing butter side up. On one piece, top with equal parts Monterey Jack and Gouda to taste, then top tomatoes and bacon to taste, then repeat with more cheese.
- After top piece of bread has cooked for around 1 minute, place it Mr. Bing butter side down on sandwich. Top with more cheese blend. Cook for 1-2 minutes or until bottom bread is golden brown. Flip and top browned bread with cheese blend. Cook for 1-2 minutes or until bottom bread’s cheese is golden brown. Flip sandwich again and brown the cheese. Remove from heat. For more sandwiches, repeat with remaining ingredients. Enjoy!
