Ingredients

  • 1 Wild Fork Boneless Beef Chuck Roast
  • Garlic powder
  • Salt
  • Pepper
  • 1 stick butter, divided
  • 5 onions, halved and sliced
  • 1 head garlic, minced
  • 1 cup white wine
  • 6 cups beef broth
  • 1/2 Tbsp dried rosemary
  • 1/2 tsp dried thyme leaves
  • 1 bay leaf
  • 2 Tbsp Worcestershire

  • Demi-baguette, cubed
  • Gruyère cheese, freshly shredded
  • Hoagie roll
  • Horseradish mayo
  • Mozzarella/provolone shredded cheese
  • (2) 12 oz oven safe soup crocks

COOKING INSTRUCTIONS:
Instant Pot French Dip

  1. Season beef liberally with salt, pepper and garlic powder.
  2. Melt half stick butter in Instant Pot on Sauté mode. Sear both sides for 2-3 minutes. Sear edges. Remove from pot and set aside.
  3. Keep pot on Sauté mode. Melt other half stick butter. Sauté onions until caramelized and soft. Salt and pepper to taste. Add garlic and cook until fragrant. Add wine and reduce by half. Add rosemary, thyme, and Worcestershire and allow to simmer for about a minute. Add broth.
  4. Nestle beef into pot making sure it’s submerged. Pressure cook on high for 20 minutes per pound and allow to natural release for at least 20 minutes.
  5. While the beef is cooking, preheat oven to 375º.
  6. Lay bread cubes on foil-lined sheet and drizzle with olive oil. Bake for 7-8 minutes or until lightly toasted. Remove from oven and set aside. Turn oven temp to 450ºF.
  7. Once the beef is done, remove it, shred and set aside.
  8. Ladle broth into oven-safe crocks. Top with croutons and Gruyère. Cook for 5-6 minutes or until cheese is melted and browned. Remove from oven.
  9. Set oven temp to broil. Slather hoagie rolls with horseradish mayo. Place beef in hoagie rolls. Top with generous amount of mozzarella/provolone blend. Broil until cheese is melted and browned. Remove from oven and serve with soup.
