Italian Roasted Red Peppers Recipe

We could eat these Italian Roasted Red Peppers by the handful, but really they’re intended as the perfect topping for salads, sandwiches, pizzas, flatbreads, really anything lol. Olive oil. Roasted garlic. Red wine vinegar. Italian herbs.

Ingredients
- 8 red bell peppers
- 2 heads of garlic, roasted
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 Tbsp dried oregano
- 1 Tbsp dried basil
- 1 tsp salt
- 1 tsp pepper
COOKING INSTRUCTIONS:
Italian Roasted Red Peppers
- Set oven to broil on high. Arrange bell peppers on foil-lined baking sheet. Broil for 4-6 minutes on each side, or until each is well-charred.
- Remove from oven and place in covered bowl for at least 30 mins.
- Deseed peppers, then pull apart into 5 or 6 equal sections. Drain all liquid from bowl.
- Add peppers back in to bowl, then add rest of ingredients. Toss until well-combined. Refrigerate overnight before using.
