These Jalapeño Hush Puppies are the only way to keep Uncle Tim quiet while his favorite team is getting whooped. AND it’s a way for you to get some accuracy practice in. Every time Uncle Tim opens his mouth to yell about the refs or the head coach or the star player he thinks is overpaid, just sling a hush puppy right at his chompers. As soon as that Mt. Olive Jalapeño flavor hits his tastebuds, suddenly being down 32 points won’t seem so bad.

Ingredients
Jalapeño Hush Puppies
- 1 cup self-rising cornmeal
- 1 cup AP flour
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp baking soda
- 1 egg
- 1 cup buttermilk
- 2 Tbsp honey
- 1/2 medium onion, finely minced
- 1/2 cup Mt. Olive Jalapeños, drained & diced
- Canola or vegetable oil, for frying
Spiced Honey Butter
- 1/2 stick salted butter, room temperature
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp dried oregano
- 1/8 tsp cayenne pepper
- Salt, to taste
- Pepper, to taste
- 1/4 cup honey, or to taste
COOKING INSTRUCTIONS:

- In a large mixing bowl, add cornmeal, flour, baking soda, salt, and pepper. Mix until well-integrated.
- In a separate bowl, add egg, buttermilk, and honey, Mix until well-combined.
- Stir in wet ingredients to dry ingredients, then stir in onion and jalapeños until well-combined.
- In a medium pot, heat 3” deep oil to 360-370ºF. Maintain this range throughout the entire cook.
- Using a 2 Tbsp scoop, fry batter in batches, making sure not to overcrowd the pot. Fry for 3-5 mins or until golden brown. Repeat with remaining ingredients. Enjoy!
Spiced Honey Butter
- In a medium bowl, whip all ingredients with electric hand mixer for 2-3 mins or until fluffy. Cover and chill until ready to serve.
