Lamb Gyro Pizza Recipe

This Lamb Gyro Pizza tastes exactly like it sounds. Like you went to the county fair and there was a 20-person line at every gyro stand, and just when you were about to give up on your Greek jones, a ray of light shined down from the heavens onto a food spot just beyond the hordes, where a bearded man with too many tattoos beckons you. And somehow you know that this hairy tatted man has been sent by the gods to gift you with a new life, one where you get to eat gyro everything. Gyro nachos. Gyro pancakes. Gyro muffins. And wisely you choose to start this life with gyro pizza. You take a bite and almost faint from delight. You go to thank the hairy tatted man, but when you turn around, the food stand is gone. But have no fear. In your hands, you’re holding 2 large gyro pizzas and a gallon of extra Tzatziki sauce to-go.

Ingredients

Gyro Lamb

  • 12 oz lamb steak
  • 1/2 tsp ground coriander
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp marjoram
  • 1/2 tsp paprika
  • 1/2 tsp cardamom
  • 1/2 tsp kosher salt
  • 1 Tbsp olive oil

 

Tzatziki Sauce

  • 1 large cucumber, diced
  • 1 tsp cumin
  • 1 tsp kosher salt
  • 2 cups plain Greek yogurt
  • 2 Tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 Tbsp fresh dill, minced

 

Lamb Gyro Pizza (makes two pizzas)

  • 1 ball pizza dough
  • 1/2 cup olive oil
  • 1 head garlic, minced
  • 1 Romaine heart, julienned
  • Low-moisture mozzarella cheese, freshly shredded
  • 6-8 vine-ripened tomatoes, sliced
  • Sliced & seasoned lamb steak
  • Feta cheese, freshly crumbled

COOKING INSTRUCTIONS:
Lamb Gyro Pizza

Gyro Lamb

  1. Slice lamb steak against the grain into 1/8” thick strips. Make one long cut lengthwise on the steak to divide strips in half.
  2. In a medium-sized bowl, toss lamb with all ingredients.
  3. Heat olive oil in medium-sized pan over medium-high heat. Cook lamb until browned but not cooked all the way through. Remove from heat and set aside.

 

Tzatziki Sauce

  1. In a medium-sized bowl, combine all ingredients and mix until well-integrated. Chill in refrigerator until ready for use.

 

Lamb Gyro Pizza – Conventional Oven Instructions

  1. Preheat oven to 400ºF. Par-bake dough for 8 minutes. Remove from oven.
  2. In a small pan over medium-high heat, sauté garlic until just before it begins to get golden. Remove from heat.
  3. Top dough with sautéed garlic and oil mixture. Top with lettuce, mozzarella, tomatoes, lamb, more mozzarella, and feta cheese.
  4. Return to oven and bake for 20-25 minutes, or until cheese is just beginning to get golden brown and crust is set. Remove from oven and top with Tzatziki sauce. Serve immediately.
  5. Repeat with other ball of pizza dough.

 

Lamb Gyro Pizza – Ceramic Grill Instructions

  1. Preheat grill with pizza stone to 750-800º.
  2. In a small pan over medium-high heat, sauté garlic until just before it begins to get golden. Remove from heat.
  3. Roll out dough and top with sautéed garlic and oil mixture. Top with lettuce, mozzarella, tomatoes, lamb, more mozzarella, and feta cheese.
  4. Place already topped pizza onto pizza stone and cook for 45-second increments, rotating pizza each time. Pizza should take bout 1 1/2 – 2 minutes until done with cheese just beginning to get golden brown and crust set. Remove from grill and top with Tzatziki sauce. Serve immediately.
  5. Repeat with other ball of pizza dough.
