Ingredients

  • Salmon fillet
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder
  • Dried oregano
  • Kale, chopped
  • Good Seasons Italian Dressing (or your favorite vinaigrette)

  • Cucumbers, sliced
  • Kalamata olives, halved
  • Pickled beets, sliced
  • Roasted red peppers, sliced
  • Cherry tomatoes, halved
  • Feta cheese

COOKING INSTRUCTIONS:
Loaded Greek Salmon Salad

  1. Brush salmon with olive oil on flesh and skin sides. Season flesh side only with salt, pepper, garlic powder and oregano. Use oregano liberally as this will form a delicious crust on the fish. Press seasoning into fish so that they stick.
  2. Preheat grill to high. Once hot, place fish flesh side down and let cook for 3-4 minutes. Flip fish to skin side down and cook for an additional 3-4 minutes depending on the thickness of your fillet. Remove from grill.
  3. Take kale and dress with your favorite Greek dressing or vinaigrette. Massage dressing into kale with your hands until kale becomes tender. Top with cucumber, olives, red peppers, beets, and tomatoes. Top with grilled salmon fillet and finish with Feta crumbles.
