This Mac N Cheese Hot Dog won’t settle for just any ole cookout. It needs people launching bottle rockets from their teeth, dogs doing handstands, toddlers stealing cars, a swimming pool full of beer, and the end of “Freedom” by Rage Against the Machine on loop for 6 hours straight.

Ingredients
Mac N Cheese
- 8 oz macaroni elbows
- 2 Tbsp cornstarch
- 1 tsp salt
- 1/2 tsp dry mustard
- 1/2 tsp pepper
- 2 1/2 cups whole milk
- 2 Tbsp butter
- 1 cup Monterey jack cheese, freshly shredded
- 1 cup sharp yellow cheddar, freshly shredded
Gold Rush Sauce
- 1/2 cup BBQ sauce
- 1 Tbsp horseradish mustard
- 2 tsp honey
- 10 dashes Tabasco
Hot Dogs
- 2 packs of Wild Fork Beef Jumbo Hot Dogs
Mac N Cheese Hot Dog
- Top-sliced hot dog buns
- Hot dogs, cooked
- Mac N Cheese
- Pickled jalapeño slices
- Gold Rush Sauce
COOKING INSTRUCTIONS:

Mac N Cheese
- Bring small pot of salted water to boil. Boil macaroni according to box instructions. Strain and set aside.
- In a nonstick pan, whisk together cornstarch, salt, mustard, and pepper. Over medium-high heat, add milk and butter whisking constantly. Bring to a boil, then boil for 1 min, whisking constantly.
- Remove from heat and whisk in cheese until fully integrated. Stir in elbows. Until ready to serve, keep pan on lowest heat setting while stirring occasionally.
Gold Rush Sauce
- In a small bowl, whisk together all ingredients until well-combined. Chill until ready for use.
Hot Dogs
- Preheat grill to medium heat. Place dogs on top rack of grill and cook dogs for 4-5 minutes (or until casing is firm and sweaty), rotating them every minute or so to cook evenly. Remove and set aside.
Mac N Cheese Hot Dog
- Place dog inside of bun. Top with Mac N Cheese, jalapeños to taste, then drizzle with Gold Rush Sauce. Repeat with remaining ingredients. Enjoy!
