Ingredients
- 5 lbs chicken wings
- 6 oz can mango nectar
- 1 mango, peeled & cubed
- 3 habanero peppers, stemmed & deseeded
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar
- 1 tsp onion powder
- Salt, to taste
- 1 stick butter
- 5 garlic cloves, minced
- 1” ginger root, peeled & minced
- 3 oz tequila
- 1 Tbsp honey
- 1 Tbsp lime zest
- Chili lime seasoning, for garnish
COOKING INSTRUCTIONS:
Mango Habanero Wings
- In a blender, add mango nectar, mango, habanero, vinegar, brown sugar, onion powder, and salt. Blend until smooth. Set aside.
- In a large pan over medium-high heat, melt butter. Add garlic and ginger and cook for 2-3 minutes or until tender and fragrant.
- Whisk in tequila and continue simmering for 2-3 minutes, or until alcohol is cooked out.
- Whisk in mango habanero purée to pan and bring to simmer. Continue to simmer for another 10-15 minutes. Consistency should be similar to apple sauce, but still loose enough to drip a bit when wings are tossed in sauce. If sauce is over-reduced, whisk in water 1/4 cup at a time to reach desired consistency. Remove from heat and set aside.
- Preheat grill to medium heat.
- Cook wings for 20-25 minutes, rotating every 3 minutes or so. Remove from heat and let rest.
- To serve: Toss wings in mango habanero sauce. Garnish wings with chili lime seasoning. Enjoy!
