Ingredients
Mexican Hot Chocolate Cookies
- 1 1/2 cups melted butter
- 1 cup white sugar
- 1 cup light brown sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups flour
- 3/4 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1 tsp chili powder
- 1/4 tsp cayenne
- 1 cup cinnamon chips
- 1 cup semi-sweet chocolate chips
Marshmallow Drizzle
- 1 Tbsp unsalted butter
- 1 cup mini marshmallows
- 2 Tbsp water
COOKING INSTRUCTIONS:

- Preheat oven to 350º
- Using stand mixer and paddle attachment, mix together butter and sugar. Add eggs and vanilla. Mix until well-combined.
- In a separate bowl, combine flour, cocoa powder, baking soda, salt, cinnamon, chili powder, and cayenne.
- Slowly add dry ingredients into wet mixture. Add cinnamon and chocolate chips.
- Drop rounded teaspoons onto ungreased cookie sheets. Bake 8-10 mins.
Marshmallow Glaze
- Grease a small pan with butter over medium-low heat.
- Add marshmallows and water to pan. Stir until marshmallows melt and mixture is creamy and smooth. Add more water if too thick. Drizzle onto cookies immediately.
