Ingredients
- 12 corn tortillas, cut into strips
- 1/4 cup canola oil + more if needed
- Salt, to taste
- Pepper, to taste
- 9 oz Mexican chorizo
- 2 onions, slivered
- 1/2 can black beans
- 2 Tbsp butter
- 8 eggs, whisked
- 1/2 cup shredded Oaxaca cheese
- 3-4 Roma tomatoes, seeded & diced
- 2 jalapeños, sliced
- Taco sauce, for garnish
- Crema, for garnish
- Sliced avocado, for garnish
- Freshly chopped cilantro, for garnish
- Queso fresco, for garnish
COOKING INSTRUCTIONS:
Migas
- Heat oil on griddle over medium heat.
- Add tortilla strips to griddle and toss in oil then season with salt and pepper. Heat tortilla strips until just beginning to crisp, then remove from griddle and set aside on a paper towel-lined plate to drain.
- Add chorizo and cook through, then remove from griddle. Then sauté onions in chorizo grease until caramelized, about 5 mins. Remove from griddle and set aside.
- Place large cast iron pan on griddle. Melt butter, then cook scramble eggs. Stir in tortilla strips, black beans, onions, chorizo, and cheese until well-combined. Remove from heat.
- To serve Migas: top pan contents with tomatoes, sliced jalapeño, taco sauce, crema, avocado, cilantro, then queso fresco. Serve immediately and enjoy!
