Ingredients

  • 1 rack of lamb
  • 1/4 cup extra virgin olive
  • 1 head of garlic, minced
  • 2 cups lightly packed fresh parsley, minced
  • 1/2 cup lightly packed fresh rosemary, minced

  • 1/2 cup lightly packed fresh oregano, minced
  • 2 tsp red pepper flakes
  • Salt
  • Pepper
  • 1 cup chopped roasted pistachios
  • 2 Tbsp spicy honey

COOKING INSTRUCTIONS:
Pan Seared Lamb Chops with Pistachio Crumble

  1. Let lamb come to room temperature. Season with salt and pepper to taste.
  2. Combine oil, garlic, parsley, rosemary, oregano, and pepper flakes in a bowl. Add salt and pepper to taste. Mix well. Toss lamb in marinade until well-coated.
  3. Coat bottom of pan with thin layer of olive oil and heat on medium-high till smoke just begins to rise. Sear chops on both sides (1-2 minutes per side, depending on thickness). Remove from heat and let rest at least 5 minutes.
  4. Combine pistachios and honey in a bowl and mix well. Make sure crumble is loose enough to be spread. Add more honey if needed.
  5. Plate lamb chops with a dollop of the honey-pistachio crumble.
