Pan Seared Lamb Chops with Pistachio Crumble Recipe

Ingredients
- 1 rack of lamb
- 1/4 cup extra virgin olive
- 1 head of garlic, minced
- 2 cups lightly packed fresh parsley, minced
- 1/2 cup lightly packed fresh rosemary, minced
- 1/2 cup lightly packed fresh oregano, minced
- 2 tsp red pepper flakes
- Salt
- Pepper
- 1 cup chopped roasted pistachios
- 2 Tbsp spicy honey
COOKING INSTRUCTIONS:
Pan Seared Lamb Chops with Pistachio Crumble
- Let lamb come to room temperature. Season with salt and pepper to taste.
- Combine oil, garlic, parsley, rosemary, oregano, and pepper flakes in a bowl. Add salt and pepper to taste. Mix well. Toss lamb in marinade until well-coated.
- Coat bottom of pan with thin layer of olive oil and heat on medium-high till smoke just begins to rise. Sear chops on both sides (1-2 minutes per side, depending on thickness). Remove from heat and let rest at least 5 minutes.
- Combine pistachios and honey in a bowl and mix well. Make sure crumble is loose enough to be spread. Add more honey if needed.
- Plate lamb chops with a dollop of the honey-pistachio crumble.
