Pancake Dipped Sausage Lollipops Recipe

These Pancake Dipped Sausage Lollipops know food tastes better on a stick, and even better cooked on a Charbroil griddle. All you have to do is whip up your pancake batter, then it’s just you, your griddle, and the morning moving as slowly as you’d like, one Lollipop flip at a time.

Ingredients

  • 1/4 cup maple syrup
  • 2 Tbsp sriracha
  • 1 egg
  • 1 1/4 cups buttermilk
  • 1 Tbsp vanilla extract
  • 2 Tbsp canola oil
  • 1 cup AP flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

  • (8) ~5” heavy bamboo skewers (~0.25” thick)
  • (1) 12 oz package Jimmy Dean Breakfast Sausage Patties – 8 count
  • 3-4 Tbsp butter

COOKING INSTRUCTIONS:
Pancake Dipped Sausage Lollipops

  1. To make Sriracha Maple Syrup: In a squirt bottle or small bowl, combine maple syrup and sriracha until well-integrated. Set aside.
  2. In a small mixing bowl, whisk egg. Whisk in buttermilk, oil and vanilla. Set aside.
  3. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  4. Add your wet mixture to your dry ingredients and use a whisk to blend until combined. A few remaining lumps are ok. Set aside.
  5. Preheat Charbroil griddle to medium heat.
  6. Cook sausage patties until completely cooked through (165°F internal temp). About 3-4 minutes per side. Set aside.
  7. Melt butter over area of griddle where you will cook Pancake Dipped Sausage Lollipops. Working one at a time, stick a bamboo skewer through a sausage patty like a lollipop so that the skewer is almost all the way through to the top of the patty, but does not protrude.
  8. Working one at a time, dredge each sausage lollipop in the pancake batter, then cook on both sides until golden brown. About 1.5-2 minutes per side. If batter on edges is still wet, briefly sear to cook through across entire edge.
  9. Remove from skillet and immediately serve Pancake Dipped Sausage Lollipops garnished with Sriracha Maple Syrup. Enjoy!
