Penne Marinara with Sausage & Burrata Cheese Recipe

Ingredients

  • 5-6 pork sausage
  • 32 oz mushrooms, sliced
  • Olive oil
  • Garlic powder
  • Salt
  • Pepper
  • 3 cups baby spinach, loosely packed
  • Marinara sauce

  • 8 oz penne, boiled al dente
  • Grated parmesan, jarred
  • Parmesan, freshly grated
  • 4 oz Burrata cheese (2 pieces)

COOKING INSTRUCTIONS:
Penne Marinara with Sausage & Burrata Cheese

  1. Preheat grill to medium-high. Toss mushrooms in oil, garlic powder, salt, and pepper. Sauté in grill wok until softened and slightly charred. Cook sausages until 160º. Remove from heat and set aside.
  2. Combine spinach, mushrooms, and marinara sauce (to taste) in pan over medium heat. Toss until spinach begins to wilt. Add jarred parmesan to taste. Add cooked penne and toss until well-integrated. Portion into pasta bowls.
  3. Slice sausage on the bias into 1/2” thick pieces. Top pasta with sausage. Break apart 1 Burrata piece per serving and top pasta with it. Garnish with freshly grated parmesan. Serve.
